Taxi easter egg for OS 2 - OS 3:
Reveal the Preferences easter egg as shown below.
Hold the page down button in any application (you might need to exit the Prefs app) and draw a line from the middle of the Graffiti input area to the left edge of the screen between the applications and the menu silkscreen buttons. There goes the taxi!

Preferences easter egg:
Go to Preferences, General tab.
Draw a small counter-clockwise circle in the lower right corner of the display area. If done properly, you should see an easter egg.

Memory Application easter egg:
Hold the stylus on the title bar at the top of the screen,
Press the scroll-down button.
You get a list of authors of the Pilot!

Giraffe Game easter egg:
In the Giraffe game, hold stylus in the upper right corner (or any upper portion of the screen).
Press the page down button.
The Pilot clears the screen and displays:

Not ready reading drive C
Abort, Retry, Fail?

Tapping on the screen returns to Giraffe.

The Pilot displays a picture of what looks like a couple of guys in tuxedos, landscape. I have no idea who they are.

Tapping on the screen returns to Giraffe.

The hula-dancing tree will appear somewhere on the screen.

Find Taxi easter egg (OS 1.x only):
In the 'Find' application, hold down the 'Scroll-Down' Button and draw a horizontal line from the center of the graffiti-field to the left edge of the screen.
Then you will see a taxi drive through!!!
